Cabbage with tuna - recipe

ingredients

• 1 raw cabbage (or 1 sauerkraut)
• 200 g of tuna (or 2 cans of whole tuna)
• 2 tomatoes, tomato paste or broth
• 5-6 tablespoons of oil
• 1 tablespoon dill
• salt and pepper to taste

Finely chop the cabbage (fidelita), add a little salt and massage it with your hands. If you use sauerkraut, you have to squeeze it and then finely chop it.

Put the chopped cabbage in a tray. Add oil, salt and pepper and mix. Pour a little water and put the tray in the hot oven.

Let the cabbage cook for half an hour. Remove from the oven and add the tomatoes (finely chopped) or tomato paste and tuna. Stir and put the food back in the oven. After a quarter of an hour, remove the tray.

You can serve cabbage with tuna, if you like, with polenta and garlic or cream. Or if not, with bread and hot peppers.

Mini tuna in the oven

I told you not too long ago about the mini-tone specimens that I turned into spicy fillets with broccoli and potato sauce. Now it's the turn of the next couple to rest in the freezer until this morning. Since yesterday's rice was too much, I thought of recycling it, also as a garnish, but for fish (this reminds me of the times when Julius Mall from Iaşi was Cantina din Tudor where 2-3 times a week I had this delicacy called "rice with fish"). I also kept the rest of the pasta I seasoned the chicken with in the Caribbean and used it today, you'll see how.

What do you need?

  • two small tones (I think two tones would not work) of 250 g each
  • some Caribbean-like spice pasta based on coriander, black pepper, cumin, ginger, cayenne, cloves, turmeric and garlic
  • 2 shallots cleaned and finely chopped
  • 2 cloves of garlic cleaned and finely chopped
  • 4 - 6 whole garlic cloves, uncleaned
  • a thread, two sliced ​​green onions
  • a few (4-5) cherry tomatoes
  • 1 lemon (½ for juice, the rest for decoration)
  • a handful of chopped green parsley
  • olive oil, about 3-4 tablespoons in total
  • 50 mL dry white wine, quality
  • salt to taste.

How do you proceed?

  • Wash the tuna (fresh or freshly thawed) and wipe with an absorbent towel.
  • Salt on the outside and inside.
  • Grease both the outside and the inside with the spice paste that I previously diluted with lemon juice.
  • Leave the fish cold (preferably in a resealable bag) to extract the flavors - one hour would be enough.
  • Remove and discard excess spice paste from and from the fish.
  • Fill the fish belly with shallots and chopped garlic, as well as green onions.
  • Place the fish in a pan greased with olive oil and toss the whole clove of garlic in the pan.
  • Cover the tray with a wet, squeezed baking sheet and place in the preheated oven at 200 ° C.
  • After 20 minutes, remove the baking sheet, decorate the tuna with cherry tomato halves and lemon slices, pour the wine lightly into the pan and put it in the oven, uncovered, for another 10-12 minutes.

While the fish is in the oven, you can prepare a sauce / salad (dressing - to be higher) from shallots, garlic and chopped onions that no longer fit in the bellies of fish. Mix them with quartered cherry tomatoes, green parsley, season with salt, olive oil and a drop of lemon juice.

In addition to fish, you can serve steamed vegetables, natural potatoes, broccoli cream, etc. If you want to keep the Caribbean specific, use red bean rice as a garnish.

Recommended wine: white, cold, dry, much, 2 glasses, OK 1 glass.

Baked tuna pasta: The recipe for a quick dinner

  • 500 grams of pasta (fusilli or penne)
  • 2 cups frozen corn
  • 400 grams of diced tomatoes
  • ½ cup of salsa (sweet, medium or hot)
  • 2 cups grated cheese
  • ¼ cup of pitted black olives, cut into small pieces
  • ½ cup of chopped coriander
  • 2 cups canned tuna, drained

The oven is preheated to 190 degrees. Boil a large pot of salted water, in which the pasta is boiled according to the instructions on the package. After boiling, drain and set aside.

Next step: Put the corn, tomatoes, salsa, 1 cup of cheese, olives and coriander in a ceramic form or in a pan. Stir, then add the drained pasta and shaped tuna. Sprinkle grated cheese on top. Put the dish in the oven and leave for 20 minutes.


Spicy pasta in the oven

300 g cannelloni pasta
2 tablespoons olive oil
3 cloves of crushed garlic
4 finely chopped anchovy fillets
500 g red pasta sauce
75 g kalamata olives cut in half
2 tablespoons freshly chopped oregano
1/2 teaspoon chilli flakes
425 g tuna in oil, pieces
25 g grated mozzarella
20 g race parmesan
1 tablespoon capers

Method of preparation:

Preheat the oven to 220 degrees. Cook the pasta in a large pot of water and salt until soft, drain and keep 1 cup of the water in which they boiled.
Meanwhile, heat the oil in a pan, cook the crushed garlic and anchovy fillets. Add the sauce, olives, oregano, capers and chilli flakes, without lid, for about 5 minutes.

Season to taste. Add the tuna and the cup of water in which they cooked the pasta.
Put all the mixture in a pan, add the mozzarella cheese and parmesan and bake for about 15 minutes, or until golden on the surface. Serve with fresh oregano leaves.


Baked Pasta with Feta Cheese and Cherry Tomatoes

Ingredient:
500 grams of Easter (I used fusilli)
750 grams of cherry tomatoes
250 grams of feta cheese
4-5 cloves garlic cut in half
100 ml of olive oil
1 teaspoon oregano
salt and pepper to taste

In a pan put the cherry tomatoes, olive oil, garlic, oregano, salt and pepper to taste. With a spoon, mix well enough to combine the spices. In the middle of the tray, place the feta cheese between the tomatoes and sprinkle it with a little olive oil.

Put everything in the oven at 200 degrees Celsius for about 30-40 minutes, or until the tomatoes become soft and break, and the cheese takes on color on top.

Meanwhile, boil the pasta according to the instructions on the package. I boiled them for 11 minutes in a pot of boiling water in which I put a tablespoon of salt.

As soon as we take the tomatoes and cheese out of the oven, we break them with a spoon enough to combine the cheese with the tomatoes and form a sauce.

Over the sauce we put the cooked pasta and drained of liquid. We mix everything well.

Easter is ready! Look how good it looks! The cheese and tomatoes formed an absolutely wonderful sauce that covered the pasta. It was done very easily and quickly.
